How to make milk rice in the village way

 



 Ingredients:


  1. 1 cup rice
  2. 4 cups milk
  3. 1/2 cup sugar (adjust to taste)


  4. A pinch of salt
  5. 1 cinnamon stick
  6. 3-4 cardamom pods (crushed)
  7. 1/4 cup grated coconut (optional)

  1. Water (as needed)




Instructions:

Wash the Rice:

Rinse the rice under cold water until the water runs clear.
  1. Boil the Rice:

    • In a pot, bring water to a boil and add the washed rice.
    • Cook the rice until it's about 70-80% done. You want it slightly undercooked at this stage.
  2. Drain the Rice:

    • Once the rice is partially cooked, drain the water and set the rice aside.
  3. Prepare the Milk:

    • In a separate pot, bring the milk to a boil.
    • Add the partially cooked rice to the boiling milk.
  4. Simmer:

    • Reduce the heat to low and let the rice cook in the milk. Stir occasionally to prevent sticking.
  5. Add Sugar and Flavorings:

    • Once the rice is almost fully cooked and the mixture has thickened, add sugar, a pinch of salt, cinnamon stick, and crushed cardamom pods.
    • Adjust the sugar according to your taste preferences.
  6. Optional: Add Grated Coconut:

    • If you like, you can add grated coconut at this stage for extra flavor and texture.
  7. Continue Cooking:

    • Allow the rice to cook in the milk until it reaches your desired consistency. Keep in mind that it will thicken more as it cools.
  8. Serve:

    • Once the rice is fully cooked and the milk has thickened, remove it from heat.
    • Allow it to cool for a bit before serving.
  9. Garnish (Optional):

    • Garnish with additional grated coconut or a sprinkle of cinnamon on top.
