Let's make " Pol Sambal"

Pol Sambal is a popular Sri Lankan condiment made with coconut, chili, and various spices. It adds a spicy and flavorful kick to many Sri Lankan dishes. Here's a simple recipe for making Pol Sambal:

Ingredients:

  • 1 cup grated fresh coconut
  • 5-6 dried red chilies (adjust according to your spice preference)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried chili flakes (optional, for extra heat)
  • 1 teaspoon roasted curry powder
  • 1/2 teaspoon turmeric powder
  • 1 sprig curry leaves
  • Salt to taste
  • 1-2 tablespoons lime or tamarind juice
  • 2 tablespoons vegetable oil

Instructions:

  1. Prepare the Ingredients:

    • If you haven't done so already, grate the fresh coconut. Chop the onion and mince the garlic.
  2. Soak Dried Chilies:

    • Place the dried red chilies in hot water for about 15-20 minutes to soften them.
  3. Make the Paste:

    • In a blender or mortar and pestle, combine the soaked red chilies, garlic, dried chili flakes (if using), roasted curry powder, and turmeric powder. Blend or grind to form a coarse paste.
  4. Saute Onions and Curry Leaves:

    • Heat the vegetable oil in a pan over medium heat. Add chopped onions and curry leaves. Sauté until the onions become translucent.
  5. Add the Spice Paste:

    • Add the spice paste to the pan. Cook and stir for a few minutes until the mixture becomes aromatic.
  6. Add Grated Coconut:

    • Add the grated coconut to the pan and mix well with the spice paste.
  7. Season with Salt:

    • Season the mixture with salt according to your taste. Stir well.
  8. Cook Until Coconut is Lightly Browned:

    • Continue cooking and stirring frequently until the coconut is lightly browned. This will take about 8-10 minutes.
  9. Add Lime or Tamarind Juice:

    • Once the coconut is browned, add lime or tamarind juice to the mixture. Adjust the quantity based on your preference for tanginess.
  10. Final Mix:

    • Stir well and cook for an additional 2-3 minutes. Taste and adjust salt or spice if needed.
  11. Cool and Serve:

    • Allow the Pol Sambal to cool before serving. It's a fantastic accompaniment to rice and curry dishes.
